Zucchini And Carrot Bread

Social media feeds, blogs,  you name it, I follow it and many of them inspire me in the kitchen.

I’m not a natural cook, in fact I quite often despise wasting time in the kitchen trying to create what I often refer to as fuel for my adventures. However, occasionally, I come across a recipe that inspires me to rush into the kitchen and start creating.

This was one such recipe.

From the wonderful people at popsugar.com who bring each of you bread packed full of hidden veggies, perfect for even the pickiest eaters.  Best of all it uses ground flax seed mixed with water instead of eggs, an absolute must for our egg free household.

This recipe is completely Leniproof and super quick and easy to make. I made it in between studying for my NCA law exams as a revision break. MrBrewVan kept an eye on the timer for me as I was in the basement but apart from that it was smooth sailing and used up lots of mutants carrots and courgettes/zucchini that are taking up valuable fridge space.

Oh yes and this stuff freezes very well, so now the freezer is full of yummy homemade bread and the best part is it contains no pesky eggs (did I mention that already? I don’t care, it’s just so freaking good, oh and it also makes great muffins if you want bite size/packed lunch ready items.  Definitely Leniproof!
